In a mixing bowl, sift the flour,baking powder & cooking soda.Seive it 3 times and keep aside. - Take a bowl and add powdered sugar, oil,curd and vanilla essence and beat the mixture using a whisker / blender.
Add the sieved maida mixture in the curd batter.Blend it again well adding required amount of milk till the batter looks almost glossy when done. - Add tutti frutti and raisins and mix it.
Either grease it with oil and apply flour all over or use parachment paper.Transfer the batter to the tin.Tap the sides of cake tin. - Use a good quality, heavy and thick bottomed 5 to 6 litre aluminium cooker. - Add powdered salt and - keep a heat proof stand or rack in the cooker then place the cake tin in it.
Close lid and cook in medium flame and after 5 mins open lid and add dry fruits and tutti frutti on top of cake and close the lid.
Lower the flame and let it cook until done (about 30 minutes - 40minutes).check it and the top should be golden and when you insert a tooth pick in the center of the cake, it should come out clean or with a few cake crumbs, with no sticky batter on it - Let the cake become warm or cool down at room temperature.Then remove the cake gently from the mould.
I have turned the cake to reverse and decorated it.Sprinkle some sugar powder over cake with a sieve.Turn out your cake with amazing look by garnishing with dry fruits,rose petals & strawberry.
Tip - coat dry fruits and tooti frooti with flour or else they sink to the bottom of the cake.If u coat it stays on the top well,if u desire to add on the top.
