Take besen (Gram flour)
Prepare red sliced onions
Get cauliflower florets
Make ready chopped spinach

Take small onion
Prepare mint leaves
Get plain yogurt
Take chopped tomatoes

Put all the vegetables in one bowl.
In a separate bowl, add gram flour And all the spices as mentioned above in the ingredients list. Gradually add the water and mix it really well until smooth thick batter is formed. Make sure the batter or the mixture is not too running. It needs to be like dropping consistency.
Place all the vegetables into the batter. Coat them well into the batter.
Heat up some oil. Once the oil is hot, deep fry them at around 180 degreeC. Tip: Use tablespoon to drop the mixture into the oil.
Fry the pakoras or bhajis untill are crispy and golden brown. Drain on absorbant paper.
For the sauce: Grind onion, mint leaves and chillies together. Add tomatoes, yogurt, cumin powder and salt. Grind it all together until the sauce become smooth in texture. Add tbsp of water if the sauce become thick.
Serve them into the serving bowl with a sauce. Enjoy yummy pakoras.
