  8. Prepare 6 Slices Mild Chorizo halved
  9. Make ready 3 sundried tomatoes slice into little pieces

Stop just barely before they are done to your liking, as they will continue to cook in the quesadilla, and scoop them into a plate. These Breakfast Quesadillas are delicious and healthy! Made with eggs, ham, spinach, tomatoes and cheese. For extra flavor add salsa and avocados.

  1. Lay out the two tortillas add the tomato purèe on both just spread it. Then add mild cheese to the tortilla that will be the top one. And the mature cheese to the bottom. Make sure you put a little more cheese all around the edge of the outsidel each as this will make the tortillas stick together. And add the chorizo all over.
  2. Chop the cooked sausage and add them all around the bottom one. Then the Bacon
  3. Lastly the sundried tomatoes i cut them up on kitched paper to lose the excess oil. Add on top of the bacon mix. Hold the top tortilla and quickly turn it over on top of the bottom one.
  4. Then press all around the sides make sure the cheese is on the edge all around. Press firmly.add it to the microwave for 2 minutes high. Then get it out and press firmly all around the edge the melted cheese shoul hold it when yhe cheese sticks.
  5. Add a little more grated cheese to the Top and just grill it for a minute just until the cheese has melted and browned. Leave to cool and cut into 4 Quaters and serve for Breakfast or Lunch.and you have 4 Quesadillas.
