Prepare For Kadi–
Prepare 1 Ltr Buttermilk(Plain or Masala)
Prepare 1 bowl Besan
Make ready 1-2 tsp Fenugreek seeds
Make ready 2-3 Bay Leaves
Take 3-4 Laung
Prepare 2 tbsp mustard oil
Take 1/2 tsp turmeric powder
Take 1-2 tsp red chilli powder
Prepare 1 tsp dhaniya powder
Prepare to taste salt
Get 2-3 whole red chillies
Take 1-2 tbsp ghee
Get 1/2 tsp garam masala
Make ready 1/4 tsp hing
Make ready 1 inch ginger(optional)
Take For Pakoda–
Prepare 1 bowl besan
Take pinch soda
Take to taste salt
Get 1 tsp red chilli powder
Take 1 chopped green chilli
Prepare Few coriander leaves
Prepare 1 tsp dhaniya powder
Get 1/2 tsp haldi
Prepare pinch hing
Get for Jeera Rice–
Make ready 1 glass Rice
Take 1-2 tsp jira
Prepare 1-2 tbsp ghee/oil
Prepare 1 elachi
Prepare 1/2 tsp sauf powder
Prepare to taste salt
Instructions to make Simple Kadi Rice (No Onion & Garlic
Langar/Prashad Style Kadi):
Kadi - Take a mixing bowl. Add buttermilk and besan. With the help of whisk, mix it well. Make sure there are no lumps.
Take 3 or 5 ltr cooker or a big sauce pan. Add mustard oil and let it heat. Add Fenugreek seeds, bay leaves and laung. Keep the heat as lowest. Cover the cooker with lid or plate. Let it cook for 30 sec - 1 min. Donot let fenugreek seeds burn. Once Fenugreek seeds turn little dark brown, add the besan and buttermilk mixer in the cooker. Mix it well.
Increase the flame now and let the kadi mixture come to boil. As soon as it starts boiling add hing, salt, red chilli powder, haldi, dhaniya powder, garam masala. Mix it well and now keep the flame as low..Let Kadi cook on low flame for another 30-45 minutes. You can adjust the spices according to your taste. Add some water in Kadi if it turns too thick.
Pakodas - Take a mixing bowl and add besan, salt, baking soda, hing, red chilli powder, haldi, dhaniya powder, garam masala, coriander leaves, green chilli. Add some water to make it a thick batter. you can also add some chopped onions if you want. As the recipe is without onion and garlic, so did not add onions here. Beat the batter well with your hands. Keep the oi for frying in a pan. With your first 3 fingers and thumb, place the batter in the hot oil carefully. Fry it until brown in colour.
Jira Rice :- Soak Rice for 10-15 minutes. Take Kadai or Cooker and add some oil. Add jira, elachi, sauf powder and salt to taste. If cooking Rice in kadai, add double water. If cooking cooker with 1 glass rice, add 1.5 glass water. Let the Rice cook for 2 whistles in cooker. For kadai, cook rice in high flame first..When very little water is left, place a tawa on the flame and out kadai on the tawa. This will prevent rice to get stuck with kadai bottom.
Now add the pakodas in the kadi. If Kadi is less sour, you can add 1 lemon juice in that. As long as kadi is cooked on low flame, more tasty it becomes. Take tadka pan. add ghee. let it heat. Now add 2-3 whole red chillies in it and let it release it's colour. Now add this tadka in the kadi and mix it well. Cook it for another 15 mins.
Serve the delicious Kadi with Rice/Chapati and some salad.
