  1. Take 1 cup rice
  2. Take Orange rice
  3. Prepare 1 small onion, chopped

  8. Prepare 1/2 tsp mustard seeds (rai)

  12. Make ready 1 tbsp split Bengal gram (chanadal)
  13. Make ready 1 tbsp split black lentils (urad dal)
  14. Prepare 3 tbsp grated coconut
  15. Get Green rice
  16. Take 4 sprigs coriander
  17. Get 1 green chilli
  18. Make ready 1 tbsp cashew nuts (or coconut)
  19. Prepare 1 tbsp oil
  20. Get 1/2 tsp mustard seeds (rai)
  21. Take 1 tbsp split black lentils (urad dal)
Steps to make Tricolour Rice:
  1. First cook the rice such that each grain is separate. Spread it on a tray to cool. Once it has cooled a little, proceed.
  2. For Orange rice - Heat the oil in a kadai and cook the mustard seeds till they papaya.Add the chopped onions and cook them for a couple of minutes.
  3. Add the tomato puree, red chilli powder, salt and garam masala.Cook it till the oil separates from the masala.Take 1/3rd of the cooked rice and toss it with the masala.Check the seasonings and then switch it off.
  4. For White rice - Heat the oil in a kadai and splutter the mustard seeds.Add the chanadal and urad dal. Fry them on low heat till they turn golden brown.
  5. Add the grated coconut and roast it for just a minute.Add the salt and another third of the rice and mix well. Switch off.
  6. For Green rice - Put the coriander leaves, green chilli and cashews in a blender. Make a smooth paste with a little water.Heat the oil in a kadai and cook the mustard seeds till they papaya.
  7. Fry the urad dal and then add the ground paste.Cook it for a few minutes, till the raw smell is gone.Add salt and mix in the remaining rice. Switch it off.
  8. Arrange the different coloured rice as per our national flag. Serve it with curry.
