The ingredients needed to make Easy Breakfast Rice:
  1. Prepare 1 cup uncooked white rice
  2. Make ready 2 cup water
  3. Prepare 4 large eggs
  4. Prepare 6 slice bacon
  5. Take 2 cup favorite cooked breakfast sausage
  6. Take 1 cup favorite shredded cheese (I use sharp cheddar)
  7. Get 1 salt and pepper to taste

Cook rice in milk and cream instead of water! This is my favorite "I have no good breakfast foods" dish when i have left over rice (Which is always). It's so quick and easy to make and very delicious! This easy version of the Louisiana classic still uses the 'holy trinity' of celery, pepper and onions to form the base of the dish.

Steps to make Easy Breakfast Rice:
  1. Start by cooking your rice. Bring to boil and turn down to low until water has evaporated and rice is tender.
  2. While rice is cooking, cook your bacon. I like to cook mine in the oven, on 400 for about 10 mins or until crispy. Dry on paper towel and break into bite size pieces. Set aside.
  3. Scramble your eggs and season to your taste with salt and pepper. Set aside.
  4. Cook your breakfast sausage, crumble if needed and set aside.
  5. Combine rice, bacon, eggs, sausage and cheese in a large pot on medium heat. Mix well and season again with salt and pepper if needed.

It's so quick and easy to make and very delicious! This easy version of the Louisiana classic still uses the 'holy trinity' of celery, pepper and onions to form the base of the dish. It's all cooked in less than half an hour in only one pan, saving you time on the. Great way to use leftover rice! For Vegan use either the rice milk or soy milk.
